Perhaps the most popular masa shape outside of tortillas, tamales have deep roots across Latin America. Broadly, tamales are wrapped masa cakes, often stuffed with meats, vegetables, and herbs, and wrapped with ingredients ranging from banana leaves to corn husks (fresh and dried), leafy greens, reed, and even plastic wrap. The word tamal is derived from the Nahuatl word tamalli, which means “unformed corn dough.”

While there are wide (and very strong) opinions on what makes the perfect tamal, our newest kit sets you up to make tamales with hojas de maiz (dried corn husks). With enough hojas to get you anywhere from 45-60 tamales, depending on the size, all you need is a filling of choice, some fat, and a large stock pot with a steamer basket.

Some of our favorite tamales are simply rajas con queso (cheese and peppers) or stewed meats in sauce. You can’t go wrong.

We collaborated with a local team out of Los Angeles to source these non-GMO corn husks directly from Jalisco, Mexico. Per our recipe testing, one pound of husks can produce 50 tamales filled with 2 ounces of prepared masa. Feel free to adjust your masa-to-filling ratio to your preference!

This masa kit contains:

  • 2 x 2.2 lb heirloom white masa harina
  • 1 lb non-GMO corn husks (please note: these hojas are treated with sulfur dioxide to ensure food safety and quality)
  • Recipe card
  • Optional add-on: Champurrado!

      It does! We recommend a 5 minute soak (minimum) which helps it dissipate prior to wrapping.
