
Tlayuda Dreams
Sourced from Oaxaca’s central valleys, the Bolita landrace is the backbone of Oaxacan tlayudas, the large-format (13″-15”) tortillas and tostadas found throughout the region. With its dense, crystalline starch, it’s easy to see how this varietal could support the structure of such a large tortilla without falling apart. Our very favorite tlayudas are made by masa whisperer Doña Catalina, the wife of our farmer partner, Don Juan Velasco. Her comal easily reaches a temperature of 400 degrees, yet her hands move across its surface undaunted, pressing each one until it’s impossibly, perfectly thin.
