Each kit makes approximately 50 tamales and contains:
• 1 bag Heirloom White Corn Masa Harina
• 15.5 oz non-GMO Hojas de Maíz
• 1 copy of ¡Tamales!, a 32-page mini cookbook featuring a primer on tamales from masa harina and 9 suggested recipes

A note on hojas: These corn husks are not the run-of-the-mill, bone-dry version you may find at your local market. They've been packed with moisture, flushed with a small amount of nitrogen, and vacuum sealed to keep them fresh. They will last up to four months, or can be frozen to extend their shelf life. While hojas arrive hydrated, we do recommend soaking in hot water for at least 10 minutes to dissipate any scent of sulfur dioxide (traditionally used as a preservative).
Usage+
Making tamales is a labor of love. Plan on setting aside a day to embark on this cooking project. In addition to this kit, you’ll need: your preferred fat (lard or vegan substitute), broth, baking powder, and the filling of your choice. Check out the ¡Tamales! book or our blog for ideas.

How many tamales does this kit make?

About 50. It will depend on how large or small your tamales are, but the kit comes with 15.5 ounces of non-GMO corn husks (or about 50 individual husks). So this is party-size! The recipes in the book are also scaled to produce about 50 tamales.

Is this kit vegetarian/vegan friendly?

Absolutely. In the ¡Tamales! mini cookbook, you’ll learn about how to make tamales using vegetarian and vegan substitutes like butter, coconut oil, and vegan shortening. Also included in the book are recipes for vegetable-forward fillings like mushrooms in pipián verde and hibiscus mole with queso panela.

Do I need this kit to make tamales?

You don’t! You can make tamales with any color of masa harina, though white and yellow are more traditional, and with hojas or husks you find at your local market or the purveyor of your choice. Check out our guide for more information.
