Classic Crunch: Call this a cousin to your favorite chili crisp. It’s savory and satisfying, thanks to garlic and onion, a blend of not-too-hot chiles, and crunchy pumpkin and sesame seeds.


Sweet Heat: The brightness of dried Montgomery cherries and real cacao nibs (a non-allergenic alternative to classic peanuts) balance out the medium heat of chipotle and guajillo chiles.  


Red Eye: A fiery, fan-favorite blend of chipotle chiles, peanuts, and (decaf) coffee with multiple dimensions of flavor — smokiness, a hint of bitterness, nuttiness — and very satisfying heat.

I tried it at a friend’s then ordered some for myself because it actually makes me want to eat more vegetables, just so I can have something to put it on. I’ve been eating it on everything: carrots, cucumbers, sweet potatoes, broccoli…basically anything you can think of cooked or raw, makes an excellent vehicle for this salsa macha.

What Can't Pura Macha Do?

Use it as a marinade. Drizzle it on tacos. Mix it into mayo. Spoon it onto tamales. Fry your eggs in it. Shake it into salad dressings. Pour it on your pizza. Liven up your takeout. We have yet to find a use for Pura Macha we can't get behind.

The History of Salsa Macha

Salsa macha's origins are in the state of Veracruz, whose long coastline hugs the Gulf of Mexico, but as is the case with many popular foods, the story of how it came to be is not entirely clear. What is worth noting, however, is that Veracruz is home to the oldest and largest port in the country and was a nexus for trade between the East and West. Was salsa macha the result of cross-continental trade? We don't know — but we do know that the free movement of people is essential in maintaining vibrant foodways.
