Masienda was created by restaurant professionals for restaurant professionals. And, while we’ve come a long way since our first restaurant partnership in 2014, we remain as focused as ever on providing the best service to our hospitality partners across the industry. The following guide is everything you need to know about how to source all that Masienda has to offer at the best price possible, no matter your concept size or stage of development.

HOW TO ORDER

Distributors 

Get Masienda products added to your regular distributor deliveries  

We have great relationships with some of the most respected distributors in the country, including Chef’s Warehouse, US Foods, UNFI, Sysco, and Julius Silvert, to name a few. If your preferred distributor is not yet carrying Masienda products, our dedicated team will help get them set up as quickly as possible.

To get started, please connect us directly with your distributor representative via email at distribution@masienda.com. Don’t forget to specify what products you would like to begin sourcing. We’ll work with your distributor to source exactly what you need. Advantages of Working with Distributors:

The most efficient way for you to get regular deliveries of Masienda ingredients is through your preferred local distributor. This goes for all of our foodservice catalog items, from bulk (50+ lb) heirloom corn and masa harina to pre-cut chips and tostadas. Some advantages to consider:

  • Exclusive Selection | Believe it or not, distributors can fulfill more of Masienda’s catalog than Masienda can itself. For example, our frozen, ready-to-cook items like our bestselling pre-cut chips and tostadas are only available   through third-party distributors with refrigerated/frozen capabilities.

If working with a distributor is not right for your business, you can place a direct wholesale order online, for both parcel AND pallet shipments

In the Wholesale section of Masienda.com, we carry both sample and wholesale (50-55 lb) quantities of our dry goods, fulfilled through parcel delivery (UPS and FedEx Ground) and pallet (freight) delivery. As a general rule, orders of 9 or fewer bags will ship via parcel, and orders of 10+ bags will ship via pallet (lift gate will be automatically included). No wholesale account set up is required.

Ordering online sends your order directly to our team for fulfillment on the next business day. You will receive an email with tracking details once your order has shipped.

Masa Programs

Interested in building a full masa program? You can either make masa by nixtamalizing the raw, whole kernel with masa harina. Here is a quick glance at both options, each excellent in their own ways. 

 

 Kernel-to-Masa
Heirloom Corn Masa Harina
This allows you to create exactly the kind of masa you want, using the corn varietal(s) you prefer, in the style that you envision. We offer not only the raw ingredients necessary to make this possible, but also the hardware and our team’s collective masa expertise to guide you along the way. The Kernel-to-Masa Program is how we started in 2014 and continues to be an exciting option for chefs looking for greater control and creative possibilities. 
This can be a quick way to easily up your masa game. Our masa harina is made using the same process of cooking, nixtamalization and grinding that you would use to prepare tortillas from scratch, but is then slowly dehydrated for ensuring maximum shelf stability. We love it because it is made using the same corn that we source (specifically Olotillo Blanco from Oaxaca), so you are easily able to access Masienda quality and flavor with a fraction of the prep.

          Which one is best for you?

          If you're looking for total control over texture, flavor and style, we would recommend doing the Kernel-to-Masa Program. Our Heirloom Corn Masa Harina comes in one, fine texture that is best suited for table tortillas (the kind that puff) and some tamal applications. We would not recommend using the masa harina for recipe tortillas (the kind you fry into tostadas, enchiladas, chips, etc.) because it will take on too much oil and bubble up more than you’re looking for. 

          Ready-to-Cook Chips and Tostadas

          Our delicious ready-to-cook tortillas, pre-cut chips and tostadas ship and store frozen (no preservatives here!), allowing you to prepare these high-volume menu items à la minute or, in the case of our chips or tostadas, batch-fry them before service, all without accruing additional labor costs. Our chips and tostadas are made with a coarser grind and lower moisture masa to ensure the crunchiest, crispiest texture possible. These are only available via distributor.

          Molinito

          Molinito is the first counter-top molino of its kind to be created for professional and home use, using fully stainless steel components that respond directly to the unique demands and spatial limitations of the working kitchen. It is light, nimble and tastefully efficient.           Frequently Asked Questions

          Does Masienda have a wholesale catalog?
          Indeed we do. While most of our catalog is available on our wholesale page of masienda.com, you can request a wholesale catalog by sharing your needs with our Wholesale Hospitality Team.

          Do you ship internationally or to Hawaii, Alaska or Puerto Rico?
          With the exception of tortillas, Masienda ships wholesale orders to addresses outside of the contiguous United States as well as internationally. In order to set up a wholesale account and explore custom freight options, please take 90 seconds to share your production needs with our hospitality team through our quick-start template. We do have minimum order quantities, and are happy to work with you on what is/isn’t possible based on your country’s importation requirements.

          How about Masienda samples?
          Sample sizes of our top-selling heirloom corn varieties, Heirloom Corn Masa Harina, ready-to-cook items, heirloom beans, and seasonal ingredients are available directly from Masienda.com. 

          Does Masienda offer consulting services?
          Masienda has worked with professional chefs, large-scale manufacturers and retailers to build custom masa programs. While this service is complimentary for our wholesale partners, we are happy to provide consultation to those outside of our network. Please email info@masienda.com to discuss in further detail.

          Can I plant Masienda corn or beans to grow my own supply?
          No. By accepting delivery of Masienda landrace maize or heirloom beans, recipient acknowledges and confirms that this Masienda product shall not be propagated, cultivated or resold, in strict accordance with the Nagoya Protocol and state sales tax regulations.

          How do I store Masienda dry ingredients like corn and beans?
          Although Masienda utilizes ultra hermetic storage bags, we kindly request that our products remain in a cool, dry place to ensure the highest quality possible. Stored properly, Masienda corn has an indefinite shelf life.

          I’m inspired! ​​How do I get started nixtamalizing corn?
          Over the years, we’ve created a variety of educational materials to help spread the gospel of heirloom corn and make nixtamalization accessible.
