Molinito = A diminutive molino (stone mill)

Whether manual or mechanized, we have yet to find a better piece of technology for grinding nixtamal into masa than the traditional surface derived from volcanic rock (basalt). Whereas blenders, hand-cranked mills and food processors use metal blades or plates to simply cut the contents inside, a proper volcanic stone mill cuts, mashes, kneads and even mixes the contents together for a well-integrated mass. Welcome to that heavenly puff that tortilla dreams are made of.

For as long as there has been a masa industry in the US, however, the stone molinos available to the public have been designed for large-scale factories. For perspective, most molinos are larger in size than the average American’s kitchen refrigerator. Needless to say, this has historically discouraged professional chefs and home masa cooks from directly participating in the storied rite of masa making from nixtamal. Until now.

Molinito is the first molino of its kind to be created for professional and home use, using fully stainless steel components that respond directly to the unique demands and spatial limitations of the working kitchen. It is light, nimble and tastefully efficient.

Think of Molinito as an OG Vitamix or Robot Coupe with an even wider range of functions; most notably, it makes excellent masa possible, which the others cannot. Additionally, Molinito may be used to make moles, flours, chile and spice pastes.

Each Molinito comes with:

  • Lifetime 15% discount (off wholesale pricing) on all Masienda heirloom corn. 
  • 2 sets of stones. We recommend using one set of stones at a time; this way, when one set is worn down, you have a fresh replacement set to hold you over until your original set has been serviced. Masienda offers stone servicing plans for all Molinito customers.

    The last 20 years I have been using a modified Chinese Rice grinder to grind my corn for tamales.Where I live the closest tortilla factory is 150 miles away…….
    I’ve been using my Molinito for about a month now and I can’t be more ecstatic! Easy to use and Clean! It makes the best masa !! I can get it very fine for Tortillas or adjust it a touch courser for my tamales.I’m also extremely pleased with the 3 varieties of heirloom corn i’ve used i can’t wait to try more! It was a long wait but well worth it. The machine is simple design and should last a very long time so happy I bought one.

      Hi Eliot, thanks for your follow up questions. One hour of use can produce approximately 40lbs. of fresh masa, extrapolating that would give you about 3,600 pounds of masa before needing to change your stones.

    Starting my grinding career with a small hand cranked mill, sweating and muscle cramps for hours I was ready for an upgrade. I had been searching for a big size molino for some time, but this is not easy to send all the way to Norway. When I heard that Masienda were developing a table top Molino, I knew I had to have one. The communication with Masienda couldn’t be better, service minded and delivering on all your needs. When I finally recieved the Molinito, it was much better than expected. Easy to use, easy to understand, easy to clean, easy to move around. What used to take hours of grinding by hand, now only takes a couple of minutes. And the quality of masa that comes out is better than I have ever experienced before.

    If you have limited space, this is exactly what you need if you are looking for a molino.

    Ever since moving to the States in 1993 I’ve been in search of the perfect taco. What a fruitless endeavor until I found Masienda, and with it, el Molinito and all the corn varieties -Mexican, of course- that my aging memory contains. With El Molinito my search is over, and only because after all these years I finally came back to my abuela’s litany “mi’jito, al taco lo que lo hace taco, es la tortilla” And so it’s at Masienda where I’ve found the perfect taco, and El Molinito is the starting point, an easy to use machine which allows me to use nixtamal in all its poetic perfection. The grinding is absolute beauty. The resulting masa is like having your firs-born child all over again. But the most moving experience is navigating Masienda’s website and finding all the corn varieties you can dream of -Mexican, of course. Tortillas, huaraches, chalupas, gorditas, memelas, tlayudas, flautas, corundas, tamales, atole, champurrado, tostadas pues. You know what I mean. All possible with El Molinito, and Masienda. Échele!

    Before purchasing molinito, I had the privilege of having a friend who actually had one and I found myself using it more than he did. I’ve used a larger, Molino only once prior to beginning the journey. Otherwise I’ve always used the common hand crank grinder which is a beautifully laborious process. At any rate molinito at first can be discouraging and intimidating. It just isn’t something you turn on and it works magic, it truly is a tale of trial and error especially trying to achieve a more fine grind. After 10 plus times of reading and re-reading the manual and just getting comfortable overall with our process we finally were able to achieve immaculate masa on a consistent bases. This is something you should handle with care and it will definitely take care of you. It’s only as good as it’s care taker. I’m so fortunate I got the opportunity to work with and finally own this wondrous piece of technology. For the person truly passionate about having the best quality masa and starting the small business with limited space or whatever reason for your purchase, it’s nothing short of a blessing to have in the kitchen. keep grinding!????

    (P.S. no masa is ever ruined no matter how corse it may turn out it can always be used for other things like fried arepas or tamales, the possibilities are endless, so don’t think of a mistake as a failure you can possibly create something entirely new.)

    I’ve been manually grinding corn for 5 years. I’ve been looking for years for a molino, but I just don’t have space. I was skeptical when I first heard of Molinito, being so compact and being a counter-top device. It absolutely exceeded my expectations when I passed my first batch of nixtamal through it. The first batch was 5 lbs of cooked corn. The finished masa was superior to anything I could’ve milled using my two arm-cranked mills. The time it takes to set-up, mill, and clean is 75% more efficient than I produce the same amount of masa from the manual molinos (not even including the time to clean those)!

    The tutorial videos and the manual are really helpful to prepare you for first run with Molinito. Definitely, watch and read the materials if you are inexperienced with powered molinos.

    The thing Molinito has really changed for me is having the time and capacity to adjust my nixtamalization process. For milling to not wear me out every time, I can start tasting varieties side-by-side, different soak times and solutions, etc. (so much geeking out!) I can’t wait to start producing more masa post-pandemic. I’ve been giving masa away just so I can use it!

    I’ve had Molinito for a couple of months now, and have been loving it! Before Molinito, my husband could get good puffing tortillas from our homegrown corn, but it was a workout – three passes through the old Estrella hand-crank. Too much for me! Now, with Molinito, I can get perfect masa, both with our own corn and Masienda’s excellent heirloom Mexican varieties, in no time flat, without breaking a sweat. Simple to operate and easy to clean.     Love this product!!! As a small organic farmer and value added product producer, I have used my share of mills even had some home made. The molinito is by far the best mill I have used. The out put of this little mill is beyond the specs and size. I can see alot of thought went into it. The ease of use and the ease of cleaning it up makes for quick and thorough quality product.     This is a long overdue review of the most amazing kitchen tool I have ever worked with. Making nixtamal masa is a tradition that has been revived by companies like Masienda. I was born and raised in Mexico, and once I came to the US 11 years ago, I stopped eating tortillas unitl now. As a chef, and as a heirloom corn tortilla advocate, Molinito 1.0 has been a dream come true. I am able to quickly make masa, almost effortlessly. It is also easy to clean, which is very important for me. I grind almost daily since it arrived to my kitchen and I don’t plan to stop!
