Our top-selling varietal, this olotillo is grown in the mountainous coastal region of Oaxaca and is the same corn we use to make our Masienda heirloom corn tortillas and Chef-Grade Masa Flour. We have found that it has a slightly higher natural oil content, making for a more concentrated, decadent corn flavor that lingers on your palate. Olotillo is a workhorse that will produce a balanced masa, no matter the final application; it contains a light, floury starch for a pillowy table tortilla and a dense enough body for making perfect tostadas, totopos and recipe tortillas (i.e., tortillas meant for enchiladas, enfrijoladas, etc.) that don’t absorb excess oil when fried.

By accepting delivery of the landrace maize or heirloom beans associated with this order, recipient acknowledges and confirms that this Masienda product shall not be propagated, cultivated or resold in strict accordance with the Nagoya Protocol and state sales tax regulations.

    This was part of my first purchase from Masienda, and I will certainly be back for more. I had made corn tortillas from store-bought masa before, but I had never started completely from scratch. These are delicious. Nothing store-bought can compare. Of course they’re great for all the usual things you’d do with a tortilla, but several of them went directly from pan to mouth! The videos on this site are very helpful, and I found that my Vitamix worked fine for grinding.

    The olotillo is one of my go-to’s for puffy table tortilla and tacos. The white olotillo is so versatile, and I love using the purple olotillo for seafood tacos!     I made my first homemade masa, tortillas and empanadas this year with Olotillo corn from Masienda. Just the process of preparing the corn for grinding filled out home with wonderful aromas. Everything we’ve made with this corn has been a hit with family and friends. I’m happy to have found a company like Masienda supporting small farmers and heirloom crops.     the previous year I had picked up beautiful white corn from tlacolula market in oaxaca. they cooked perfectly. I kept trying to find the exact ones to match it and it was always off. Until I bought the white corn from Masienda. It was a perfect match. I know its super esoteric to care about the exact corn but if you do this is it.

    I worked in a restaurant that used this corn for their tortillas and the flavor/quality was incredible. It makes the kind of tortillas that you can stand in the kitchen and eat warm with nothing on them. It would be the first corn I’d order if I was going to make them at home.

    The heirloom white Olotillo corn is really a new level in flavor. Pozole is a standard at our household and we recently enjoyed a potful with two kids of our kids, home for the holidays. Both asked about the hominy and noticed both the flavorful kernels but also how it stood up alongside the pork and peppers.

    This corn is very clean, and makes delicious masa. I do not have a proper grinder, but my ancient Robot Coupe is good enough to make a coarse grind for masa para tamal. I use enough chicken stock to let the Robot Coupe process the nixtamalized corn, then use half Crisco and half manteca de cerdo, sal, y baking powder, then the masa, then mexican crema fresco to make the tamale dough. The latter addition is courtesy of Fonda San Miguel, in Austin. Wonderful!

    I’m a home made masa newbie, so don’t think that I am a corn expert as you read this. With that said, I love how the Olotillo masa I made yesterday, first time, turned out. The corn kernels themselves were clean, mostly uniform (as in no obvious or excessive deformed or “icky” looking kernels), smelled really nice, etc. When I nixtamalized the corn there were maybe ten floaters out of two pounds of corn, so I’m taking that as a good sign of quality. When all was said and done I was really pleased with my tortillas because they tasted amazing, and my family raved over them. I don’t know that we will be able to stand store bought tortillas now. We are hooked and seeing visions of all sorts of masa related pleasures in our future. Highly recommend, will definitely be back for more corn and cal. Thank you for great customer service too!
