Fermín’s resting energy level is the average person’s pumped, and let’s just say he was super-duper pumped when he shared this spectacularly subtle recipe twist on pico de gallo. Also known as salsa mexicana on account of its green (serrano), white (onion), and red (tomato) colors, this version is inspired by the same kind of pico de gallo traditionally used on the Guacamaya torta. Guacamaya pico is prepared by folding guajillo puree into trad pico’s chopped ingredients; it’s as simple—and as thrilling for Fermín—as that.
