Growing up, my mom would make ensalada de pollo after a long work day; it was an affordable and easy recipe for her to throw together that would keep us all full and satisfied. I'd eat it as a snack on a tostada or Saltines, and in a sandwich for lunch the next day. Now, I make it when I'm short on time and need something healthy, simple, and packed with protein. As long as you have a rotisserie chicken (or some already-poached breasts), it comes together in ten minutes, is loaded with vegetables, and is super satisfying thanks to a creamy dressing. Don't forget to top it off with a drizzle of Valentina for an extra kick!
