Heirloom Tomato Tostadas with Avocado Purée

Peak-season tomatoes deserve the spotlight. These heirloom tomato tostadas pair creamy avocado purée with juicy tomatoes, flaky salt, and crisp tostadas for a simple meal that lets every ingredient shine. Perfect as a light lunch, appetizer, or easy dinner, it's a recipe you'll come back to all tomato season long.

Ingredients

  • 1 avocado, halved

  • Olive oil

  • Juice of 2 limes

  • ¾ teaspoon ground cumin

  • Kosher salt

  • 1 large or 2 small ripe heirloom tomatoes

  • Flaky salt, such as Maldon

  • 4 baked tostadas

  • 1 serrano chile, and thinly sliced into rounds, for garnish

  • 2 scallions (white and light green parts), thinly sliced, for garnish

Directions

  1. Scoop the avocado flesh into a medium bowl or jar. Add 1 tablespoon of olive oil, half the lime juice, and the cumin. using an immersion blender, puree until smooth. Season to taste with kosher salt.

  2. Cut the tomatoes into irregular bite- size pieces. Season with olive oil,the remaining lime juice, and flaky salt.

  3. Spread about ¼ cup of the avocado puree evenly on each tostada. Top each with the seasoned tomatoes and garnish with the serrano and scallions.
