We’re taking fried green tomatoes even further south with this twist on a classic. Slabs of tart, peak-summer tomatillos get dunked in an egg batter spiked with hot sauce, then coated in a masa and potato chip crust before being fried to a shattering crisp. You can stop here: dunk the tomatillos in chipotle mayo. Or you can take it over to Baja for a plant-based fish taco vibe, tucked into warm corn tortillas slathered with that same mayo and garnished with a crunchy cabbage slaw. Either way, this one’s worth turning on the stove for.
