There's nothing like a warm flour tortilla straight off the comal — soft, pliable, and ready to wrap around anything. Traditionally, flour tortillas are rolled out by hand with a rolling pin on a floured surface. It takes a bit of elbow grease, and makes a bit of a mess. One of the most common questions we get in our DMs is whether you can use a tortilla press to make flour tortillas, too. We were skeptical at first — tender flour tortillas really depend on that gluten development — but upon extensive testing, we found that by applying a bit of extra pressure, a heavy-duty press like Masienda's produces thin, pliable tortillas that puff and brown perfectly on the comal. However you shape them, once you try these homemade tortillas, you'll never look at store-bought the same way again.
