The Masa Trio is a tour de force in terroir and biodiversity that spans three states and three distinct varietals of heirloom corn. Each bundle includes our white, blue, and yellow single-origin masa harinas for your masa flight-tasting pleasure.
The Masa Trio includes our Chef-Grade Masa Harina (flour), in each of these 3 heirloom varietals:
Blue Cónico (Estado de México) – Our blue cónico is grown by farmer partner Armando Guadarrama, whose family has grown the varietal for 5 generations (as far as he can personally trace). The blue masa harina makes a tortilla with a tender texture, brilliant blue color, and an aroma of fresh elote.
Yellow Bolita (Oaxaca) – Made with yellow bolita corn grown by farmer partner Juan Velasco, the yellow masa harina creates a light and fluffy masa with an airy texture and sweet vegetal flavor akin to butternut squash. The yellow color only becomes more vibrant upon cooking, and will give you bright, golden tortillas.
White Olotillo (Oaxaca) – White olotillo is a workhorse of a varietal–with a medium starch density and high oil content, it makes for a delicious, flavorful tortilla with tasting notes of buttered popcorn and white masa with a slightly sun-kissed color.
