This one-bowl strawberry buttermilk corn cake fits the bill, and more. It can even be made gluten-free. And if you want to call it breakfast, well ... who are we to judge?

Hi Lily! We haven’t tested this recipe with ricotta, but it might work! Ricotta is a bit thicker, and masa tends to be pretty thirsty — so you may need to add a little extra liquid. If you give it a try, please report back — we’d love to hear how it turns out!

Hi Della and Diana! To make this cake gluten-free, substitute the all-purpose flour with a 1:1 gluten-free flour blend (like Cup4Cup). Masa harina is naturally gluten-free.
How can this be made entirely gluten free?
What is your suggestion for gluten free? Substituting GF flour? Thanks.
