Turn Your Smashburger Into a Taco

These smashburger tacos are comfort food wrapped in a tortilla. The secret is using a tortilla press to get ultra-thin patties with lacy, golden edges—and the same press works great for making the tortillas. While corn tortillas will always have our heart, these tacos are made with flour or 50/50 corn-wheat tortillas, and we're not mad at it. And the toppings? You can keep it classic with pickles and special sauce, or go taco-style with crema and pico de gallo. However you top them, they’re the perfect combo of burger and taco magic.

4 tacos

Ingredients

  • 1 pound ground beef

  • Kosher salt

  • Neutral cooking oil

  • 8 slices white American cheese

  • 4 homemade or store-bought 6-inch flour tortillas (or 50/50 corn-wheat tortillas), warmed

  • Optional toppings: pickles, mayonnaise, ketchup, onions, sliced avocado, pico de gallo, crema

Directions

  1. Form the ground beef into 4 equal patties (4 ounces each) and season with salt.

  2. Set a griddle or skillet over medium high heat and oil lightly.

  3. Line a tortilla press with parchment paper. Working with one patty at a time, put the patty in the center of the bottom liner, close the press, and apply gentle pressure. Lift the lined patty off of the press and peel off the top liner.

  4. Flip the patty, unlined side down, onto the pan, and peel off the top parchment liner. Cook the patty on one side, then flip and top with two slices of cheese. Flip again if you like a costra (cheese crust) or not if you want a melty middle.

  5. Top the patty with a tortilla, then flip so that the tortilla is on the bottom and cook until lightly toasted.

  6. Dress each taco with your toppings of choice: keep it in the burger camp with special sauce, pickles, and onions, or go the taco route with sliced avocado, pico de gallo, and crema.
