Treat Your Squash Blossoms Like the Delicacy They Are

Quesadillas de Flor de Calabaza (Squash Blossom Quesadillas)

Squash blossoms are one of the most iconic fillings in Mexican cooking. Their season is brief, their flavor subtle, and their arrival is something we anticipate each year.

There are many ways to treat flor de calabaza, ranging from the complex (stuffing with cheese, battering, and frying) to the utterly simple (tucking raw blossoms into a quesadilla and allowing them to wilt just slightly with heat). 

One of our favorites is commonly found on the streets of Mexico City during their season: a guisado, or stew, consisting of lightly sautéed blossoms with onion, chile, and epazote, melted into quesillo on a blue corn tortilla quesadilla. With something so delicate and fleeting, few ingredients are needed, just reverence and care.

A classic guisado of sautéed flor de calabaza (squash blossoms), onion, serrano chile, and epazote folded into warm quesadillas with melting quesillo.

Ingredients

  • 2 tbsp neutral oil or lard

  • ½ small white onion, thinly sliced

  • 1 serrano chile, sliced into very thin matchsticks

  • 12–20 squash blossoms, stamens removed and torn into bite-size pieces

  • 2 tbsp water

  • Salt, to taste

  • 3–4 epazote leaves, hand-torn

  • 4 corn tortillas

  • ½ lb quesillo cheese, pulled into shreds

Directions

  1. Heat a skillet over medium heat. Add the onion and serrano chile and cook until softened and translucent.

  2. Add the squash blossoms and 2 tablespoons of water. Season with salt and cook until the blossoms are wilted and tender.

  3. Stir in the epazote, then remove from the heat.

  4. Place a tortilla on a hot comal and add ¼ of the quesillo cheese. Top with some of the squash blossom mixture and fold the tortilla in half. Cook until the tortilla is warm and the cheese has melted. Repeat for the other three quesadillas and serve immediately.
