Salsa borracha, meaning drunken salsa, gets its name from the splash of alcohol stirred in at the end. Typically, cooks reach for a dark beer, but chef Gustavo Romero of Oro by Nixta (and the host of our Salsa Master Class) prefers a long pour of mezcal for a smoky finish. Charred tomatoes, serranos, onion, and garlic are ground into toasted cumin and chile de árbol, then finished with fresh lime, cilantro, and the aforementioned mezcal for a bright, punchy salsa that pairs perfectly with tacos.
