Ingredients

  • 2 tbsp avocado oil

  • 1 small white onion, finely diced

  • 1 whole jalapeño, finely diced (seeds removed if you prefer less spicy)

  • 2 Roma tomatoes, finely chopped

  • Salt and pepper to taste

  • 6 large eggs

Directions

  1. Heat the avocado oil in a large skillet over medium heat. Add the onion, jalapeño, and tomatoes to the skillet. Stir occasionally and cook for about 6-8 minutes until the vegetables have softened and most of the tomato liquid has evaporated. Season lightly with salt.

  2. While the vegetables are cooking, whisk the eggs in a medium bowl until fully combined and slightly frothy. Season with a pinch of salt and pepper.

  3. Once the vegetables are ready, reduce the heat to medium-low and pour the whisked eggs into the skillet. Gently stir to mix the eggs with the vegetables. Cook for about 3-4 minutes, stirring occasionally, until the eggs are fully set but still soft and fluffy.

  4. Transfer the eggs to a serving plate. Garnish with cilantro and serve with warm tortillas, refried beans, and sliced avocado on the side.
