Ingredients

  • 6 cloves garlic, peeled

  • ½ white onion, roughly chopped

  • 2 serrano chiles, roughly chopped (or jalapeños if you prefer less spicy)

  • 5 ripe tomatillos, quartered

  • Juice of 2 limes

  • Bunch of cilantro, leaves and tender stems, roughly chopped (about ½ cup packed)

  • 1 ripe avocado

  • Salt, to taste

  • 2 tbsp avocado oil

Directions

  1. Add the garlic, onion, serrano chiles, tomatillos, lime juice, cilantro, and avocado to a blender.

  2. Blend on low speed, gradually increasing to high, until the mixture turns a smooth, uniform color.

  3. With the blender still running, add a teaspoon of salt.

  4. Once smooth and uniform, drizzle in the avocado oil to help emulsify.

  5. Taste and add more salt as needed.
