Ingredients

  • 1 small garlic clove

  • 1 tsp kosher salt

  • 1 cup cilantro leaves

  • 1 1/2 tbsp lime juice (from 2-3 limes)

  • 1 tbsp white vinegar

  • 1 tsp Dijon mustard

  • 1 tsp honey

  • 1/4 cup extra virgin olive oil

Directions

  1. In your molcajete, grind the garlic clove and salt into a paste.

  2. Add the cilantro leaves and grind until they're broken down and you reach a uniform consistency.

  3. Add the lime juice, white vinegar, Dijon mustard, and honey. Stir with the tejolote (pestle) to mix.

  4. Continue to grind/mix while adding the olive oil in a long, slow pour.
