Our spring Chef en Residencia, Ana Nelson, is a Mexico City-born, Florida-based mamá of 5 who’s passionate about teaching the internet Mexican recipes—many passed down from her Michoacana mother and now shared with her children. For Ana, cooking is more than just preparing food; it’s about connecting to and embracing her culture through dishes that tell her story.
Ana's first recipe for Masienda is her version of quesadillas fritas. These crispy, golden quesadillas made with fresh tortillas and filled with quesillo cheese were a favorite afterschool snack and a special comfort when she first moved to the US and felt out of place. Today, Ana makes them for her own kids, bringing that same warmth and nourishment to her family’s table. Topped with salsa de molcajete, Mexican crema, queso fresco, and shredded lettuce, they’re the perfect way to bring a little piece of home to your own.
