When Carlos Salgado opened Taco María in 2013, he made a decision to honor his family’s culture and hard work by making Mexican-inspired food with a reverence for its provenance.
Masienda has proudly partnered with Taco Maria since our own launch in 2014, supplying Chef Carlos and his team with blue cónico from Don Armando for their in-house kernel-to-masa program.
Over the years, Taco María has garnered consistent critical praise–earning a coveted Michelin star, among other accolades–solidifying its reputation as a bellwether of Alta California cuisine and a culinary destination for SoCal natives and beyond.
While we all look forward to Taco María and our favorite local restaurants to reopen their dining rooms soon, we are thrilled to support Taco María, in the meantime, by making their signature salsa recipes available on Masa + Tienda.
Chile Ancho (⅖ Spice meter) – 8 ounce jar
(Ingredients: Chile ancho, black garlic, chile de arbol, grapeseed oil, salt)
The chile ancho brings a sweet, dried fruit quality to this salsa, which pairs brilliantly with the black garlic’s tangy essence. Add a little chile de arbol for heat, and…disco. This salsa has quesadilla written all over it, roasted vegetables (mmm, leeks, please), pesto pasta and a killer salad dressing. As pictured, this salsa accompanies Taco Maria’s tasting menu mainstay, scallops with queso Chihuahua and squid ink breadcrumbs.
Chile Morita (⅗ Spice meter) – 8 ounce jar
(Ingredients: Chile morita, peanuts, garlic, oregano, cumin, grapeseed oil, salt)
Savory umami heft with a lingering, humming spice. Dollop onto fried rice, cold soba noodles, crushed cucumbers or BBQ tacos. As pictured, this salsa accompanies Taco Maria’s smoked sturgeon taco with pickled candied cucumber.
Chile de Arbol (⅘ Spice meter) – 8 ounce jar
(Ingredients: Chile de arbol, garlic, oregano, cumin, sugar cane, white wine vinegar, canola oil, salt)
Definitely the spiciest but perhaps the most familiar of the three, the chile de arbol salsa accompanies virtually every a la carte dish at Taco maria. Salty with a balanced, sharp acidity and searing heat. This plays like a classic chili oil that you’d drizzle onto pizza, with a more assertive, complex chile as its backbone. Drizzle onto scrambled eggs for breakfast, mix into fresh yogurt for an elevated vegetable crudite dip or enjoy with your favorite taco (as pictured).
Chicatana-Chile Crisp (⅖ Spice meter) – 8 ounce jar
(Ingredients: Dried chile, chicatana ants, garlic, oregano, cumin, canola oil, salt, lime)
This Chicatana-Chile Crisp is our newest (and most favorite) addition to the lineup, incorporating Masienda-sourced Chicatana ants from Oaxaca. Reminiscent of an XO sauce and full of umami, this chile crisp brings both incredible flavor as well as texture to everything from squash blossom quesadillas to sunny side-up eggs.
