Heirloom White Olotillo Corn



Our top-selling varietal, this olotillo is grown in the mountainous coastal region of Oaxaca and is the same corn we use to make our Masienda heirloom corn tortillas and Chef-Grade Masa Flour. We have found that it has a slightly higher natural oil content, making for a more concentrated, decadent corn flavor that lingers on your palate. Olotillo is a workhorse that will produce a balanced masa, no matter the final application; it contains a light, floury starch for a pillowy table tortilla and a dense enough body for making perfect tostadas, totopos and recipe tortillas (i.e., tortillas meant for enchiladas, enfrijoladas, etc.) that don’t absorb excess oil when fried.

By accepting delivery of the landrace maize or heirloom beans associated with this order, recipient acknowledges and confirms that this Masienda product shall not be propagated, cultivated or resold in strict accordance with the Nagoya Protocol and state sales tax regulations.

PLEASE NOTE: Orders received by 2pm PT will ship within 2-3 business days, US holidays excluded and regardless of shipping method (i.e, FedEx Ground versus USPS Priority Express). For example, orders received on or before 2pm PT on Tuesday will ship by Friday; orders received after 2 pm PT on Tuesday will ship out by Friday or Monday.     I’m a home made masa newbie, so don’t think that I am a corn expert as you read this. With that said, I love how the Olotillo masa I made yesterday, first time, turned out. The corn kernels themselves were clean, mostly uniform (as in no obvious or excessive deformed or “icky” looking kernels), smelled really nice, etc. When I nixtamalized the corn there were maybe ten floaters out of two pounds of corn, so I’m taking that as a good sign of quality. When all was said and done I was really pleased with my tortillas because they tasted amazing, and my family raved over them. I don’t know that we will be able to stand store bought tortillas now. We are hooked and seeing visions of all sorts of masa related pleasures in our future. Highly recommend, will definitely be back for more corn and cal. Thank you for great customer service too!
