A hearty bean with deep, earthy notes, this bean has a brilliant color ranging from light to rich yellow, and plumps up into bean magic when cooked. With a denser starch, this bean will hold its shape and texture during cooking: we love it for frijoles de la olla.
When our farmer partner Don Fernando from Tlaxcala asked us if we thought there would be interest in heirloom beans from Tlaxcala, we said “claro que si!”. Fernando uses regenerative and organic agricultural practices by rotating crop plantings between corn and beans. The beans add beneficial nitrogen to the soil, which in his words, acts as an excellent organic fertilizer that “works for free.”
By accepting delivery of the landrace maize or heirloom beans associated with this order, recipient acknowledges and confirms that this Masienda product shall not be propagated, cultivated or resold in strict accordance with the Nagoya Protocol and state sales tax regulations.
