We developed this high-pH masa specifically for chefs and high-volume restaurants. Made in Mexico from just two ingredients — non-GMO corn and alkaline water — Masa Taquera boasts a traditional, nixtamal-forward flavor that calls to mind fresh tortillas from a tortillería.

 

Although it’s made from white corn, Masa Taquera produces a soft yellow tortilla thanks to increased pH levels from calcium hydroxide. A low wash-off nixtamal means the corn’s whole grain is present. The additional pericarp (skins) give the masa extra pliability and durability without the addition of gums or binding agents. Masa Taquera yields tortillas that are forgiving, bend without cracking or crumbling, and thrive in high-volume establishments. Count on it to hold strong throughout service, deliveries/to-go orders, and off-premise events. This is the masa your tacos have been waiting for.

Usage+
Masa Taquera was developed specifically for tortillas. For our best tortilla-making tips, check out our YouTube playlist.

Mixing a small batch? For every 1 packed cup of masa harina (120 g), mix with 1 scant cup warm water (200 g) in order to yield about .75 lbs (320 g) of hydrated masa for about 8-10 tortillas (5-6 inches in diameter).

Mixing a full 20 kg (44 lb) bag? You'll want to use 27-28 liters of water (or about 7 gallons) to start, adding small amounts as needed to reach desired hydration. Recommended mix time is 3-5 minutes. Let rest for at least 5 minutes. This will yield approximately 47-48 kg of hydrated masa, or approximately 103-105 lbs.

How does Masa Taquera compare to Heirloom Masa Harina?

Masa Taquera is a high-lime masa with a higher pH and overall elasticity. It produces a tortilla that puffs easily and holds up under pressure. Masa Taquera is made from commercially grown, non-GMO Mexican corn. Heirloom Masa Harina is comparatively more delicate in composition, with a neutral pH and more nuanced flavor profiles. It is made from heirloom corn grown by smallholder farmers in Mexico who sell Masienda their surplus. It's available in four colors (white, blue, yellow, and red).

Why is Masa Taquera less expensive than Heirloom Masa Harina?

Factors such as yield, labor, varietal uniqueness, climate risks, freight costs, and batch production sizes all contribute to the price difference between these two masa product lines. For example, Masa Taquera is made with non-GMO corn from Mexico that is grown commercially at scale using modern tools like irrigation and mechanized harvesting, which serve to de-risk and optimize each growing cycle. Our Heirloom Masa Harina, by contrast, is produced with manually cultivated (i.e., hand-planted, harvested, shelled, etc.) heirloom corn within subsistence farming communities across remote parts of Mexico. In addition to being lower-yielding, these heirloom corn varietals are grown in rain-fed conditions, which can further exacerbate yield volatility and serve to elevate raw ingredient costs. Notwithstanding their differentiated supply chains and pricing, both our Masa Taquera and Heirloom Masa Harina are positively fuego (fire).

Which masa is right for me?

Heirloom Masa is a great choice if you are interested in a nuanced flavor profile or looking for a range of colors for applications such as taco specials or menu items like gorditas, tetelas, sopes, tamales etc. If you are cranking out hundreds of tortillas per service, need to pre-cook and hold tortillas, and/or have a delivery component to your business, we encourage you to work with Masa Taquera.

Is Masa Taquera non-GMO? Is it organic?

Masa Taquera is made with non-GMO corn. However, it is not certified organic at this time.

How many tortillas can I make with one bag of Masa Taquera?

A 44 lb bag of Masa Taquera makes approximately 1,300 to 1,600 tortillas.
