Chicatana Ants are a rare Mexican delicacy. They’re harvested in select parts of the country only during the first major rains of late spring and early summer — that’s to say, an exceedingly narrow region within an even narrower window of time. Enjoyed in a salsa chicatana or accompanied by mezcal, Chicatanas are a salty, smokey tradition.
