Sopa Seca De Fideo Tacos for the Young — and Young-at-Heart

Sopa de Fideo is a dish that transports me back to the comforting aromas of mi mama's cocina. Growing up as a picky eater, this warm, comforting soup made with toasted fideo noodles served as a clever tactic for sneaking veggies like tomatoes and onions into my diet. Whether we were on a budget or facing a time crunch, sopa de fideo was always a quick and yummy solution — a true staple in countless Latino households. One of my favorite ways to enjoy it as a child (and even now) is by making a simple taco, scooping some fideo onto a freshly made tortilla, and topping it off with crema, queso fresco, and sliced avocado. Don't forget a squeeze of lime to brighten it up.

This recipe is super customizable: add a dried, rehydrated chile to the broth for a kick, or bulk it up with extra veggies like peas, diced carrots, or diced zucchini — even beans for extra protein. If you can't find fideo noodles, break spaghetti into one-inch pieces.

Ingredients

    • 1 package (7oz) fideo noodles (or spaghetti broken into one-inch pieces)

    • 2 tbsp oil

    • ⅓ cup chopped onion plus ¼ white onion, divided

    • 1 cup water

    • 6 Roma tomatoes

    • 3 garlic cloves

    • Dried chile guajillo (optional)

    • 1 tbsp chicken bouillon, optional (adjust salt to taste, if not using bouillon)

    • Fresh warm tortillas

    • Crema

    • Queso fresco

    • Avocado slices

    • Lime wedges

    Directions

    1. Heat 2 tbsp of oil in a pot. Add chopped onion and sauté until softened. Once softened, add the package of fideo to the pot. Cook, stirring occasionally, until the fideo turns golden.

    2. In a blender, combine the water, 6 Roma tomatoes, 3 garlic cloves, ¼ white onion, and dried chile guajillo (optional) for added color and a kick of spice. Add 1 tbsp of chicken bouillon. Adjust salt later based on your preference. If you prefer, you can use salt instead of bouillon.

    3. Pour the blended sauce into the pot with fideo.

    4. Cook the mixture for 15-20 minutes, allowing the flavors to combine.

    5. Taste the fideo and adjust the saltiness according to your preference.

    6. Serve with fresh tortillas. Garnish with a dollop of crema, crumbled queso fresco, a slice of ripe avocado, and a squeeze of lime.
