Our Favorite Salsa Roja

Salsa roja — also known as Salsa Chorreada, or Salsa Molcajete (for the incredible tool used to make it) — is a Mexican classic, the salsa every home cook worth their salt should have a version of. Our recipe comes from our partners the Juárez family (makers of our Molcajete) and utilizes an herb native to Mexico called pipitza. The flavor is similar to cilantro, but packs a much bigger punch: it's citrusy, with hints of pine and mint and the bite of arugula. It's worth seeking out if you can find it at your local Mexican market, but you can substitute cilantro in a pinch.
