I am put off on how to cleanly cut through 3 layers of tortillas.
Am I overthinking; does the sauce soften the tortillas enough?
Otherwise I think I would roll like enchiladas to make it easier to serve.

Plus – this would be quick with canned chicken (if you have some in the back of the pantry)- letting meat sit in sauce for a day would help flavor the meat.
