LA-based cottage baker Max Simon, aka @challahdad, sells his unique, homemade challah loaves to small local shops and as one-off drops on Instagram. He's been experimenting with adding masa to his challah for nearly a year now, and the results are absolutely delicious. Take it away, Max:
"My name is Max Simon, and together with my wife, Carly, we run challahdad — a dad joke making, challah baking bread brand in Loaf Angeles, Challahfornia. Since baking in the pandemic, our loaves have taken on all different shapes, sizes, flavors, always with 'challahborations' at the forefront of what we do. Challah is a great canvas to play with as it pairs well with most ingredients and is a versatile sandwich bread.
I’m excited to share my 'cornydad' challah recipe that uses Masienda’s yellow corn masa harina. It’s still fluffy and sweet like a regular challah with an added corn flavor that makes it a treat with chili, Mexican food, a thanksgiving meal, or just with butter and salt! I’ll also say that this is not just a one-off for me as I’ll be adding it to my regular home bake rotation."
