These Masa Pancakes Are Easy Like Sunday Morning

These tender, slightly sweet pancakes come together quickly (we've been known to throw them together on a weeknight morning!) and, unlike many other masa pancake recipes we've tried, don't rely on any wheat flour filler. That means they're totally free of gluten, dairy (depending on the milk you use), and refined sugar — and totally delicious. The recipe is lightly adapted from Kate Ramos of Hola Jalapeño. Absolutely DELICIOUS! The olive oil was a surprisingly good addition. And cooking in olive oil was much better than in butter. I served with blueberries heated in maple syrup with a little nutmeg and lemon zest.
