Heirloom Yellow Tuxpeño Corn (Chiapas)
$15.00 – $60.50
(Video above^^^From Milpa to Mesa–translation: “From Corn Farm to Table”–is a preview of the kernel-to-masa process that turns heirloom corn into fresh masa.)
Tuxpeño is the super great, great grandparent to US commodity corn. Because it can be found across Mexico in a range of climates and growing conditions, this varietal was readily suited for localized seed breeding across the world. Perhaps for this very reason, large seed companies essentially hijacked tuxpeño to create Yellow #2, the most prolific corn that we see in production today throughout the US and beyond.
But don’t let it’s recent history fool you! Tuxpeño is versatile, delicious and richly pigmented. Hailing from Chiapas, this tuxpeño’s masa has the deepest shade of yellow of any other yellow varietals that we carry (bolita being a very close second). It is downright corny in flavor, making it easy to understand why it spawned the global phenomenon that commodity corn is today.

While I use different Masienda varietals , I’ve found that my favorite corn is the Tuxpeno , both for color and flavor. It holds up well for other masa applications other than tortillas as well. For anyone looking for a classical street tacos flavor, this corn is the way to go!!!

We have tried many different types of Masienda heirloom corn, for yellow varieties in particular we fell in love the fist time we tried this yellow Tuxpeño corn in our house, the texture of the masa from nixtamal is amazing and makes tortillas with the perfect consistency and rich, very tasty flavor. We liked it so much that after trying it we bought a 55 lbs bag to make our masa every week.
