Heirloom Red Cónico Corn (EDMX)
$13.25 – $60.50
(Video above^^^From Milpa to Mesa–translation: “From Corn Farm to Table”–is a preview of the kernel-to-masa process that turns heirloom corn into fresh masa.)
Grown in the highlands of Atlacomulco in Estado de México, cónico (especially the blue varieties now endemic to the region) has long been coveted for its application to table tortillas.
Masienda’s partner grower, Armando, maintains a 5 hectare milpa that has been in his family for five generations (which is as far back as he can personally trace). We’re thrilled to welcome Armando’s red cónico to our offerings — the red is not as commonly grown as the blue, but Armando can’t speak highly enough of this kernel’s flavor and texture for his tortillas at home. His word of choice to describe them: sabrosisísimo.
For more information and inspiration on this varietal, check out our Masa Weekly: Red Cónico blog post.
