Why “Chef-Grade”?

Since launching in 2014, Masienda has collaborated with top chefs to develop custom, in-house masa programs for their restaurants around the world. While these programs have helped spark a fresh masa movement in professional kitchens, we recognized early on that not all kitchens would have the physical space or resources to execute daily masa production. Masa flour (masa harina) was a convenient alternative, but the leading options left more to be desired, from sourcing to quality.

Masienda Chef-Grade Masa Flour was developed to solve this problem, crafted to deliver:

  • Superior Flavor–derived from Masienda’s single-origin supply chain and culinary (never industrial) approach to sourcing

  • Consistency–We individually dial in the cook, nixtamal and grinding processes for each scratch-made batch

  • Ease of Use–Just add water (no molino required)

How It’s Made

Masienda’s Chef-Grade Masa Flour begins with single-origin heirloom corn (white olotillo) sourced from the tropical (coastal) climes of Oaxaca, Mexico.

This whole-kernel corn is gently cooked and steeped in slaked lime (alkaline) water, an ancient technique known as nixtamalization. This process softens the corn, imparts calcium and activates the essential amino acids and vitamin B3 found naturally in each kernel.

The kernels (now nixtamal) are then ground into a fine masa, or dough. For Masienda Chef-Grade Masa Flour, the masa then undergoes a low-and-slow drying process, which makes for a finished, shelf-stable masa flour that carefully preserves the flavor and nutrients of a freshly-milled masa.

With the simple addition of warm water*, the masa is transformed into the foundation for hundreds of dishes, including corn tortillas, tamales, tostadas and other delicious preparations.

Masa Directions

1 Chef-Grade Masa Flour : 1.4 Water* (by weight e.g., 1 kg : 1.4 kg)

If you do not have a scale, one packed cup of Chef Grade-Masa Flour requires approximately one scant cup of water (by volume).

Slowly add the water to the dry masa flour in a large bowl, stirring the masa to incorporate evenly by hand (you may also choose to use a standup mixer with paddle extension). Knead until the water is evenly incorporated and no dry, powdery spots remain. Add salt, spices and seasonings to taste (optional), evenly incorporating throughout finished masa. If aiming for a masa for tortillas, you want a finished masa that is moist to touch, but not tacky (leaving bits of wet masa on your hand and fingers).

Once prepared, use immediately, or rehydrate with additional water before use (if waiting several minutes before use).

Tortilla Note: For additional hydration during tortilla cooking process, we recommend using a spray bottle/mister to lightly hydrate each side of the tortilla (to prevent dryness and cracking).

*Warm water (~100 degrees F, or the hot setting on your faucet) is recommended, in order to begin blooming the natural flavor of the masa and to fully activate the small bits of pericarp (corn skin) in the masa flour (which help the masa bind, naturally).

Notes

1 lb of Chef-Grade Masa Flour yields approximately  2.4 lb of service-ready masa (38 tortillas, weighing 1 oz each before cooked—84 tortillas in each 2.2 lb bag of Masienda Chef-Grade Masa Flour)

Store in cool, dry place for up to a year.

Ingredients: Non-GMO heirloom corn (premium), trace of lime

* Water can be substituted with other liquids such as stocks, broths, juices etc., depending on the desired flavor. Spices may also be added. Masienda respects tradition while encouraging creativity for all cooks.

I knew of Masienda because some of my favorite Fine Dinning Mexican Restaurants in LA used their masa, so I knew the masa was special.     Compared this product with some of the masa harina that I had in my pantry, one that I purchased at the local market. The aroma of the Masienda product was infinitely better than the other one. When hydrating the flour, Masienda’s product felt a bit softer and I noticed more flecks of what I’m assuming was the skin of the corn. The difference in smell was less noticeable here, however, Masienda’s still had a stronger corn smell. Both tortillas puffed nicely while cooking. They looked very similar after they were done. The tortillas made from Masienda’s flour were softer, yet stronger (pull test). The tortillas tasted very fresh and were superior to the other tortillas that we made. Great product. I would highly recommend trying some.

    I have been making my own tortillas since the late 70’s when I moved to New Hampshire where the only tortillas available at the time were canned. I was afraid to try them. I started out using a big American brand name masa that was available in Boston. I have tried every brand I could find over the years. Masienda’s masa makes the best tortillas of any brand I have tried.. I live in costal Northern California now and can easily find tortillas, but my home made tortillas made with Masienda’s masa are better than any I can buy in the stores.

    I already got into nixtamalizing my own corn from Masienda but I decided to try the dry mix anyway. I would say you can get 95 percent of doing the whole process but instantly. This fixes the problem of friends and family wanting tortillas but you don’t have a day to do the process a head of time. Its also amazing if you just wanted maybe 2 or 3 for dinner bam its done.

    Masienda’s chef-grade masa harina makes truly wonderful tortillas — up there with the best I’ve enjoyed in Mexican friends’ and relatives’ homes. It’s worlds better than the agribusiness masa brands available in supermarkets (not just in the U.S. but, alas, in Mexico as well) which are as dismal as over-refined white flour. By contrast, Masienda’s chef-grade masa harina has a rich nutty flavor, handles easily, and creates perfect, supple tortillas. The result for me as a Mexican-American is instant time travel to my boyhood and teen years.     I was hesitant to spend this much and decided on three bags of masa for my order to bring down the shipping cost per bag, figuring I could pawn a bag off on my brother or a friend in case I was disappointed in my homemade tortillas, like I had been the only other time I had tried making them (using the cheap supermarket masa in the green and yellow bag). That was just a couple short months ago and I am now back on the site to buy more! The quality of my tortillas GREATLY exceeded expectations, and in fact, were better than even some from nicer Mexican restaurants where they claim to make them homemade. Delicious and worth every penny!! I shared NONE of the bags and still need to get more for myself and my husband. I cannot tolerate supermarket tortillas anymore. One tip… I use a glass pie pan that has no raised edge or lip on the bottom to press out the tortillas between heavy ziploc bag plastic instead of a press. Works just fine!

    I bought some masa harina as a gift to spice up my chef life and the same night that I tried it I ordered bags for my sister, my mom & dad, my grandma, my neighbors, my employers and my future mother in law! No joke this stuff will elevate any meal you use it with!! It’s a life saver when you only have say: a can of beans and a handful of cheese because in minutes you have homemade pupusas that will blow you away! Anyway, tamale season is coming so you’d best be stocked 😉

    If you put in the work kneading these, you’ll ger soft, supple, pillowy, impossibly aromatic tortillas.

    Only one caveat — and this may have more to do with me than with the product — the “just the right hydration” window is a iittle narrow. I’m not used to precisely weighing my masa and water, but found i had to with this one, according to the proportions provided (which didn’t differ by much from my usual formula of 2 cups masa/1.5 cups water, but differed enough to make a differenxe). This masa a bit less forgiving than that milled from other varities.

    That being said, learning to get this one just right is worth the effort. (And despite the learning curve with this particular masa, even my first “bad” non-puffing tortillas still turned out amazing.)

    I have made tamales only a couple of times and they were so gritty and corny. This time my tamales made from Masienda brand, were smooth and didn’t have that corny taste. Everyone enjoyed them. They also make the best light tortillas, even left over and reheated.

    We were making poor quality corn tortillas every once in a while with Maseca masa, and inspired by the book “Tacos” by Stupak and Rothman, we upped our game by making them better, and much more frequently. After trying Masienda tortillas at a local restaurant, we immediately ordered 10 bags, which took our tortillas to another level of quality – the dough feels better, the tortillas taste better, and getting the ratio of masa to water almost perfect with a kitchen scale has improved consistency, with little adjustment based on dough feel needed. Time to order more!

    I’ve been making tortillas at home for 15 years now — first with Maseca, then for years with Gold Mine organic and occasionally Bob’s Red Mill. I’ve also been lucky to travel in Oaxaca and revel in the extraordinary corn of the region. Discovering Masienda a couple of years ago was a true game changer. This product is exquisite, aromatic corn, bred and grown by people who revere corn. It’s amazing to be able to purchase a product of this quality, to be able to make tortillas at home in the same league as the extraordinary tortillas I’ve had in Oaxaca. The at-home culinary possibilities open wide. This masa harina is also very easy to work with. The grind is finer than Gold Mine, resulting in lovely textures. I’m never without this stuff.

    Saw this on one of Rick Bayless’ kitchen demo videos and gave it a shot. Arrived promptly and the instructions were easy to follow. I find this stuff kicks the grocery store masa’s butt. It’s pretty forgiving, too, so even on the first try, you’ll prob be pretty happy with the outcome. Has really elevated my Mexican cooking.

    My husband and I built a tortilla press (we had some extra time during this quarantine), and we were looking for a good quality heirloom corn masa to use. We would eventually like to try nixtamalizing whole kernel corn, but until then we will use this masa. It makes delicious tortillas and the directions and process are simple. Once you go with fresh tortillas, store bought seem to have no flavor. We have gone through two bags in a month and I’m about to order more.
