Less Is More

Our tortillas are made the traditional way, using the ancient Mesoamerican method of nixtamalization. This refers to the process of cooking and steeping organic corn in an alkaline solution to soften the corn, activate its essential amino acids and vitamins, and impart incomparable flavor, texture, and aroma. The corn is then finely ground into masa and then pressed and cooked to perfection. With an ingredient list this short (just corn and alkaline water), it all comes down to execution: we work with the very best corn available and our cooking process is perfectly honed. And that’s why our tortillas are so delicious.

What is the best way to heat these tortillas?

If your tortillas are frozen, first defrost them (ideally overnight in the fridge). We recommend a few different methods for reheating:

Stovetop Method: Preheat a nonstick pan or comal to medium-high heat. Rub each side of the tortilla lightly with water. Heat tortilla for 20-30 seconds per side. Wrap tortillas in a clean kitchen towel or tuck into a tortilla warmer until ready to serve.

Microwave Method: Separate tortillas and place 3-4 tortillas at a time on a microwave-safe plate and cover with a slightly damp paper towel. Microwave for 30 seconds or until they reach your desired pliability, then transfer to a clean kitchen towel or tortilla warmer until ready to serve.

Why are they refrigerated/frozen?

Because we don’t use preservatives, we need to use refrigeration to keep our tortillas fresh and delicious.

Are your corn tortillas gluten-free?

Yes, our tortillas are gluten-free. We make them in a tortilleria that exclusively produces corn tortillas (where none of the eight major allergens are present). The only ingredients in the product are corn and alkaline water. 

When do they expire?

If you choose to freeze your tortillas, they’re good for up to two years. Once thawed, we recommend consuming within 15 days.
