Rick's Favorite Recipe

Rick was kind enough to share his favorite recipe from Mi Cocina with us, and it’s a memorable one: a rotisserie chicken spinoff of Mexico’s iconic tacos al pastor (made by marinating thin cuts of pork steak in chiles, spices, and Recado Rojo and layering the steaks on a vertical spit called a trompo). It has a totally unexpected flavor, familiar because of the brick-red pastor marinade and caramelized onion and pineapple, but surprising because it’s married to a perfectly roasted and juicy chicken with chile-stained meat that just falls off the bone. Paired with fresh corn tortillas, there’s almost no better meal we can imagine.
