Ayocote Morado Beans
55 lb
These plump, earthy ayocote morado beans are a rich shade of purple. They’ll add visual interest and deep flavor to any bean preparation; we love serving them simply in their broth, topped with cilantro and a fried egg.

The Ayocote plant is closely connected with the cultivation of corn, meaning they are traditionally grown in the same plot alongside each other.

• Sourced from Tlaxcala.
• These beans are grown on the slopes of the Matlalcueitl volcano (also known as “La Malinche”), at an altitude of 2,540 meters. The rich, fertile soil creates a large, hearty and vibrant bean.
• 55 lb / 25 kg
We recommend cooking these beans with a few cloves of garlic, white onion and an avocado leaf or two, though they'll thrive in just about any preparation.
