Guess the Special Ingredient in this Party-Perfect Salsa

Salsa borracha in a molcajete, alongside a plate of tacos
Salsa Borracha, as its name suggests, is an alcohol-infused salsa (typically beer, but you can use mezcal or tequila as well). It's a perfect accompaniment to a carne asada: if you're having a beer while grilling, why not throw some in the salsa as well, for added flavor?Start by pan-frying tomatillos, tomatoes, onion, garlic, and chiles, then slow-cook them with a can of beer (the alcohol will evaporate as it cooks, so this salsa is suitable for everyone to enjoy). Grind in a Molcajete or pulse in a blender, just be sure to keep it rustic. Finish with a squeeze of lime and a sprinkle of fresh cilantro and diced onion, and get your grilled meat and fresh tortillas ready!

This recipe was made for our Molcajete Chico; if you have our regular Molcajete, please feel free to double the amount of each ingredient.
