Grown in the highlands of Atlacomulco in Estado de México, cónico (especially the blue varieties now endemic to the region) has long been coveted for its application to table tortillas.
Masienda’s partner grower, Armando, maintains a 5 hectare milpa that has been in his family for five generations (which is as far back as he can personally trace).
Perhaps on account of Yellow #2 flooding the Mexican market after 1994, yellow varietals are more often grown for animal feed than tortillas. Even Armando was a bit skeptical when we purchased our first sample of yellow cónico from him back in 2015. But its masa consistently proves otherwise. Tasting notes of buckwheat and honey with that pillowy starch cónico is known for. We’ll take whatever we can get!
