The chalqueño landrace may indeed originate from the Chalco region of Estado de México, but its cultivation additionally spans the states of Puebla, Tlaxcala and parts of northern Oaxaca. This particular lot is a testament to Oaxaca’s biodiversity and the power of terroir: it counts as one of the whopping 35 landraces (out of 59!) that thrive in Oaxaca and it also offers a nuanced variation on the chalqueño landrace itself. Although the kernels are still conically shaped (a signature chalqueño characteristic), its starch density is closer to what you might expect of a bolita landrace (albeit a touch softer). The result is a chalqueño varietal with bready notes and a solid textural range for table tortillas, totopos and crispy tostadas.
