Heirloom Purple/Red Mushito Corn
Gorgeous hues of red, purple and pink abound in this mushito lot from Michoacán. Nestled in the heart of avocado country, this landrace has thrived in the highlands of Michoacán thanks to the indigenous Purépecha people. The landrace’s survival is reflected in the tenacity of the Purépecha people themselves–this indigenous community notably thwarted the Aztecs on numerous occasions, maintaining its independence throughout pre-Hispanic history.
While the masa translates to a more earthen clay color, the soft starch texture and oaty flavor set the stage for a deeply satisfying table tortilla. Note: kernel colors vary from bag to bag, please see all three photos for sample color variations.
