Nestled in the heart of avocado country, this landrace has thrived in the highlands of Michoacán thanks to the indigenous Purépecha people. The landrace’s survival is reflected in the tenacity of the Purépecha people themselves–this indigenous community notably thwarted the Aztecs on numerous occasions, maintaining its independence throughout pre-Hispanic history.
On the spectrum of starch density, mushito is technically the lightest verietal we source for masa. It has been a staple at Masienda since day one, making for a soft, pliable tortilla, delicious corundas (a triangular, sometimes oval-shaped tamal from Michoacan), or any other masa-based dish, for that matter. This masa translates to a consistent steel-blue color with a grassy, creamy flavor.
By accepting delivery of the landrace maize or heirloom beans associated with this order, recipient acknowledges and confirms that this Masienda product shall not be propagated, cultivated or resold in strict accordance with the Nagoya Protocol and state sales tax regulations.
