    Just received my order of Harina in the mail, thank you! Should I store it in the freezer in-between uses?

      Hi Cheryl! You can definitely store in the freezer, if you’d like. A cool, dry place (Ziplock protected) will also be just fine in your pantry. Hope you enjoy!

    The taste is outstanding! Very different from any tortilla I ate growing up in Yuma. What do you know about the farming of this corn? Are the farmers spraying any chemicals? I hope Monsanto has not gotten to Oaxaca! I bought 20 pounds of this and do not want to saturate my body with some chemical pesticide or processing additive. ???

      Hi Brenda, thanks for the kind words. We’re really glad you enjoy them. As far as the farming goes the majority of our farmers are smallholder and the majority of these farmers use the traditional milpa system of growing corn, beans, and squash, which encourages soil health and weed suppression. Pesticides are not common, not only because the farmers don’t want to use them, but also because they’re not readily available nor a traditional growing/harvest practice. We always encourage and prioritize purchasing from growers that use regenerative organic practices. As far as post-harvest handling is concerned, we do not fumigate any product, rather, we use ultra hermetic storage for pest prevention.
