A Perfect Pour

Pour over is our go-to for letting really good coffee shine. It’s both the most low-tech way to brew coffee, and the coffee geek’s preferred method. Grind about 20g of coffee to the consistency of coarse sea salt, rinse your filter, and place the filter and the coffee inside your pour over dripper/brewer, atop a mug. Put the whole contraption on a scale, tare, and begin adding about 300g of warm (205 degree) water from a gooseneck kettle in concentric circles: 40g at first, in an outward spiraling motion, until the coffee grounds puff up and “bloom.” Continue adding water in 100g intervals (60g for the final interview) in 45 second increments, until the scale reads 300g. Remove your filter and serve!
